Choosing fresh fish is essential to enjoy its full flavor and nutritional value. Although it may seem tricky, there are clear signs that reveal if a fish is truly fresh.
Start with the eyes: they should be clear, shiny, and slightly bulging. Sunken or cloudy eyes are a sign of aging. The gills must be bright red or pink, never brownish, and without a bad smell.
The skin of fresh fish looks shiny, with firmly attached scales and no dark spots. When touched, the flesh should feel firm and spring back to its shape, never soft or mushy.
Smell is another clue: fresh fish smells of the sea—clean and mild—not of ammonia or rancidity. The tail and fins should be moist and intact, not dry or brittle.
In reliable markets, fish is displayed on crushed ice at the right temperature. Still, it’s always a good idea to ask the seller about the catch date and origin.
